Using in-season veggies, this is a simple, delicious, and beautiful everyday dish that will also impress your dinner guests! The cilantro sauce aids digestion and is a balancing pungent taste for the sweetness of the veggies.
What you’ll need:
1-2 vegetables per person—variety of in season veggies
Olive oil
Ground fennel
Chopped fresh herbs or dried—basil, thyme, etc
S&P to taste
What you’ll do:
- Cut all veggies in similar size pieces
- Put in a bowl, coat with olive oil and seasonings
- Bake in baking dish at 375 for 45 minutes or until soft, but not mushy
- Serve with Cilantro Sauce.
Cilantro Sauce
What you’ll need:
1/2 cup packed cilantro
1 date, pitted
1 Tbsp grated ginger
1/3 cup lemon juice
1/8 cup olive oil
1/8 cup yogurt
S&P to taste
What you’ll do:
- Blend all ingredients except S&P.
- Pulse in salt and pepper gradually to taste.
